The surprise of aging. This sparkling wine is the result of a precise selection of Chardonnay (64%) and Pinot Noir (36%) from the village of Alella and a long aging. Production of 4,000-6,000 bottles.

Aromas of very ripe white fruit.
The palate is broad, structured and voluminous with notes of toast and pastries as a result of long aging. It presents a fine and integrated bubble.
The winery takes the name of the historic farmhouse (18th century) that stands among its vineyards in Santa María de Martorelles (Vallès Oriental). The common denominator of the wines is the native variety of the area (Pansa blanca) and the uniqueness of the vineyards, all of them historical and, in some cases, planted before the phylloxera. Another common denominator is the care of the vine so that the wine is the most honest expression of the terroir where it was born.
Plot selection.
Pressing of the grapes and fermentation at a controlled temperature of 17ºC in barrels of different sizes of fine grain French oak. The winter was normal and dry, while the spring was rainy and cold, which delayed bud break and fruit ripening. The September rains also contributed to this fact, making the harvest significantly later compared to recent years. The wines are fresh, aromatic and elegant.
Alella is characterized by a sandy textured soil called "sauló".
The plantation density is 3,700 vines/Ha with a planting frame of 2.2 x 1.2 meters. The vines are trained on trellises and we carry out a short pruning. The vineyards are located in the municipality of Alella. The Chardonnay vineyard is dominated by the rawest saulo, generating a very concentrated grape. The Pinot is grown in a plot where there is also the presence of red clay allowing to maintain the freshness and volume in the grapes.
