Can Matons Sant Fost de Campsentelles is a wine that seeks to show the expression of the most significant parcels of the town of Sant Fost de Campsentelles. It is born in the Canyelles and Can Torres estates, vineyards between 20 and 80 years old, with sandy-textured soil (sauló), poor in nutrients, with little water retention and moderate pH. The vineyards are worked in an organic way, always trying to preserve the acquired legacy.
Yellow with greenish reflections.
Its aroma is intense and frank, where the aromas of white fruit and light floral notes stand out.
Wine with volume, unctuous and with a long aftertaste.
The winery takes the name of the historic farmhouse (18th century) that stands among its vineyards in Santa María de Martorelles (Vallès Oriental). The common denominator of the wines is the native variety of the area (Pansa blanca) and the uniqueness of the vineyards, all of them historical and, in some cases, planted before the phylloxera. Another common denominator is the care of the vine so that the wine is the most honest expression of the terroir where it was born.
The oldest plots are fermented in oak barrels.
Pressing of the whole grape. Very slow fermentation at a controlled temperature of 16 ºC in stainless tanks. The oldest plots are fermented in 400 and 500 L oak barrels.

Sant Fost vineyards are characterized by a very fine sandy soil called sauló, originating from the decomposition of granite.
