Heretge is a monovarietal of Cariñena that breaks with the "dogma" followed until now by Scala Dei Cellars, where the Grenache has always been the hallmark. It is, therefore, a transgressive bet, a "heresy" and a tribute to the ancestral viticulture of the area. This limited edition of around 3,000 bottles has been crafted using grapes from vines more than 80 years old from three different "costers": Cap la Serra, Parts de l'Ase and La Font, thus faithfully reflecting the typicity and the unique character of the area.

The Winery

Scala Dei is the oldest winery in Priorat. Its origins lie in the lands surrounding the Scala Dei Monastery, where Carthusian Monks made wine as far back as the year 1163.  Today, the same spirit of artisanal craftsmanship is maintained and adapted to new techniques.  The Scala Dei wines are a true expression of the terroir, made using very special vineyards in a prime location. They stand out for being the oldest in the area, situated at altitudes between 400 and 800 metres, with distinctive soil and a variety of orientations.

Elaboration - Vinification

The idea is not to intervene so that what the wine shows is the peculiarity of the terroir that so much marks the Priorat slate wines.

The elaboration of the wine is similar to the one we make in Scala Dei Cellars with our Grenaches from historic vineyards. Thus, the fermentation took place in open cement tanks, alternating overpumping and pigeage according to the daily tasting. Fermented with 30% of the scrap, which corresponds to one of the three "costers", where we managed to harvest with a mature scrap. He was in contact with the skins for 22 days from the incubation until the pressing. Fermentation takes place with autochthonous yeasts.

This wine comes from three different "costers": Cap la Serra, Parts de l'Ase and La Font, all planted between the Vilella Alta and Torroja just after the phylloxera.

Therefore, the ages of the plants range from 80 to over 95 years. The predominant orientation is north, except in one of the vineyards, where there is a part that is oriented to the south. Parts de l'Ase is the largest vineyard, and besides being a jewel for the plants that are in it, it is also a jewel and a testimony of the popular architecture of dry stone construction since in it we find different constructions of use, of water, of space, roads, walls...
