Scala Dei Cartoixa is not only the most emblematic wine of the Scala Dei wineries; it is also a milestone in the wine history of Priorat, as it was the first wine bottled under the D.O.C. Priorat. Scala Dei Cartoixa is made with a selection of the best autochthonous grapes of the area: Grenache and Cariñena.
A deep to very deep, dense morello cherry red with violet hues.
The intense aromas of ripe black fruits, plum plus a touch of violet intermingle with distinct mineral notes from the licorella slate terroir which give it its distinct Priorat typicity. Its aging in barrels gives it spicy aromas such as vanilla, pepper and toasty notes.
It is robust, buttery, supple with intense mature tannins, with full rounded body and a long lingering finish.
Scala Dei is the oldest winery in Priorat. Its origins lie in the lands surrounding the Scala Dei Monastery, where Carthusian Monks made wine as far back as the year 1163. Today, the same spirit of artisanal craftsmanship is maintained and adapted to new techniques. The Scala Dei wines are a true expression of the terroir, made using very special vineyards in a prime location. They stand out for being the oldest in the area, situated at altitudes between 400 and 800 metres, with distinctive soil and a variety of orientations.

This wine is made from grapes selected from the choicest vineplots. Each plot was fermented separately in small stainless steel and cement tanks at a controlled temperature. Maceration lasted about 3 weeks depending on the varietal and the grapes, in order to obtain a wine with body. After crushing, the wine was racked into barrels for malolactic fermentation. Raising this vintage lasted 18 months and for her the best French oak barrels were selected. The mixture of new barrels and one or two wines depending on what each wine asks us, new oak for more corpulent, first or second year for the finer Grenaches characterizes the aging of this wine.

Due to the steep landscape, the trellising of the vines and above all the desire to obtain only the choicest grapes, harvesting is carried out solely by hand. The vineplots are situated 500 and 800 metres above sea level.
Each year, depending on the vintage's characteristics and given the possibility of choosing among an endless number of small vineplots scattered at different altitudes and facing in all possible directions, we select those which have produced the best grapes. These are then fermented separately, gently crushed to preserve the expression of the fruit and all steps are taken during the winemaking process to maintain all the varietal quality, the grapes had during the time of harvesting.
