The origin of its wines, the great wealth and variety of its soils, high quality raw materials and very careful winemaking combine to ensure that the wines from Legaris express and extol the unique character of the area.
The grapes were quickly transported to the winery to maintain their qualities.
Afetr destemming, the berries arrived almost whole in the stainless-steel tanks, and we processed the different grape sources separately. We performed a cold prefermentative maceration (10 ºC) for 1-2 days to extract aromas and color, and then allowed the temperature to increase gradually. The wines began alcoholic fermentation naturally, using their own native yeasts to express the typicity of our different terroirs. Fermentation temperatures ranged between 26 and 28ºC. The press run was done approximately between 14-16 days from the start of fermentation. The average aging in barrels was 12 months in selected Bordeaux barrels made of fine grained French oak, American oak, and a small percentage of Hungarian oak. This wine was not cold stabilized, so due to its natural production, it may present sediments. To refine the wine, a gentle egg white clarification was performed before bottling.
The grape variety used for the 2021 vintage of thius wine is exclusively Tinto Fino (Tempranillo).
We have our own vineyards (121 hectares) in the estates of Curiel de Duero and Peñafiel (Valladolid), and San Martín de Rubiales and Gumile de Mercado (Burgos). For this wine, only the two estates located in the province of Burgos were used. In 2020, we began converting our own vineyards to organic viticulture, which was completed with de 2022 harvest. The 2021 harvest started al Legaris on September 30th with our Tinto Fino from the Curiel de Duero estate (Valladolid), a fist-year Valbuena de Duero (Valladolid) vineyard, and the old vines from Peñaranda de Duero (Burgos) and concluded on October 20th.
