Deep and intense red color. 

Nose

The Winery

The Séptima winery is located in Mendoza, the largest wine-producing region in Argentina, with the Andes mountain range to the west.  360 hectares of vineyards at an altitude of 1,050 metres above sea level, the vines are cared for individually and completely by hand. The great level of respect for the land and minimal intervention winemaking processes ensure that Séptima wines are of the highest quality.

 

Elaboration - Vinification

It is harvested in small containers (20 kg boxes) by selecting clusters in the vineyard. 

For 50% of the must, pre-fermentative cold maceration is carried out at 5°C for 7-10 days and then fermentation is carried out at 28°C using selected yeasts. For the remaining 50%, more than 50 microvinifications are carried out: with whole clusters, cofermentations of varieties, different ripeness moments, in different types of wood, whole grains, different selected yeasts, different yields, temperatures, etc. All wines are identified by lots and kept separately in French, American and Hungarian oak barrels and French oak vats. The oak aging takes 18 months and after the optimal blend is made, the wine is matured in bottle for 12 months before being released to the market.

Vineyard - Viticulture

Each variety is worked punctually in the vineyard and in the winemaking process.

We work on the choice of cooperages, sizes and types of oak, uses of oak, vineyards, harvest times and areas. It is a wine that grows in time and in the glass. It is our classic and modern wine. Yields for the 2020 vintage in the different production zones were affected by a late frost during the flowering season, a situation that, together with the high temperatures recorded during the ripening months and the lack of rainfall, led to the harvesting all varieties 15 to 20 days early. The reduced yields favored an extraordinary concentration of the crop and by managing the early harvest, we maintained an excellent level of freshness.
