The selected vines are harvested when the flavors, sugars and tannins are at their optimum. After gentle crushing, the pips are removed. The grapes ferment at a controlled temperature with selected yeasts and the wine remains on the skins for a long time to increase the depth and texture of the wine. After pressing, malolactic fermentation is completed. Once completed, we leave the wine until it is ready to be bottled.
