The Winery

Founded in 1901 in the town of Haro’s legendary Station Quarter, Bodegas Bilbaínas is the longest-standing bottling winery in Rioja.  It also has the most extensive underground cellars in the region and a greater area of vineyards than any other winery in the town: 250 hectares of high quality vines, which supply the winery with its own grapes, ensuring that they can be processed quickly without losing their qualities.  Viña Pomal is its flagship brand, which embodies the Rioja Alta's best winemaking tradition. These are exceptional wines that have remained faithful to the classic style of authentic Rioja from the outset.

Elaboration - Vinification

The grape was destemmed and moved almost entirely to the tanks.

The grape was destemmed and moved almost entirely to the tanks. After a pre-fermentative cold maceration of 48 hours, the alcoholic fermentation was carried out at 25 ºC in order to preserve the varietal aromas. The total duration of the maceration was 8-10 days. Then the wine spontaneously performed the malolactic fermentation in stainless steel tanks. Once finished, the wine was transferred to American oak barrels, where it was a total of 3 months. Subsequently, a slight clarification and a final filtration was carried out to refine the wine before bottling.

Vineyard - Viticulture

Once again, the miracle has been worked in Ribera del Duero.

Once again, the miracle has been worked in Ribera del Duero with very hot temperatures in September and high for the usual in October, we have found a rapid maturation in the case of plants that had less amount of grapes, notably the vineyards affected by frost and those of greater age, the winegrowers must later wait a little longer for the perfect maturation in the case of the plants with higher production, which was a quite common note this campaign due to the size of the berries, which It has been superior to the usual.
