Elaboration - Vinification

Red Vol i Dol is made from a traditional winemaking.

Red Vol i Dol is made from a traditional winemaking. The grapes made a small maceration of hours together with their skins in stainless steel tanks and quickly added the yeasts to start the fermentation. After this, transfer to another tank to perform the malolactic fermentation. Once finished, the wine rested a few months in deposit to round and soften the tannins.

Vineyard - Viticulture

The vineyards are chosen following criteria of health, maturation, homogeneity and vegetative balance.

The vineyards are chosen following criteria of health, maturation, homogeneity and vegetative balance. To ensure that the vineyard remains active until the harvest without excessive vigor and good exposure to sunlight, but with a slight shading, agricultural practices of the latest technology are used and work together with winemaking to prepare each grape with its own characteristics of the wine to be made. Most of the vineyards from which the grapes are used are located on slopes to facilitate drainage and thus avoid excess moisture.
