Once the grapes are harvested, they arrive at the winery where they are processed in the press to extract the must. The clean must is fermented at a low temperature, 16 °C, in order to preserve all the aromatic potential. Impulso Semi-sweet is achieved by stopping the alcoholic fermentation with cold, to obtain the desired sugar concentration. The objective is to find a perfect balance between the sweet sensation provided by natural must sugars and the acidity typical of the Viura variety.

Vintage 2019
The 2019 vintage in the D.O.Ca. Rioja resulted in a more moderate harvest, conditioned by less compact bunches and smaller grapes, all of which are key in guaranteeing maximum quality. The outstanding health status, made possible by the extraordinary meteorological conditions throughout the harvest and especially during the month of October, would make this vintage something exceptional. The good vegetative state of the vineyard has been key to achieving these results. There have been no significant weather setbacks, which has allowed us to achieve that optimal moment for collection. The rains occurred at the optimum times and the vegetative conditions have been extraordinary throughout the year, which has allowed us to obtain balanced wines with great aromatic intensity and very good color extraction.
They emphasize the balance between pH, acidity and alcohol, despite the fact that the last days of harvest, due to the high temperatures, maturation accelerated and the alcoholic strength rose somewhat.
