Yellow Tail Chardonnay is made with grapes sourced from the highest quality vineyards. The fruit is gently pressed to extract maximum freshness and flavour. The fresh clarified juice is fermented using a selection of different yeast strains. This adds complexity and texture to the final wine. Maturation on yeast lees, malo-lactic fermentation and oak is used to impart the creamy, nougat flavours, add richness and balance the acidity.
