The Winery

The history of Codorníu is the story of 18 generations of a vine growing family.  In 1872, Josep Raventós made the first bottle of cava, applying the traditional method to a blend of the grape varieties of Penedès: Macabeo, Xarel·lo and Parellada. Codorníu reflects the history, tradition, passion and expertise of a family winery with more than 450 years of history, which today continues to maintain its leading position in the production of quality wines and cavas. His cellars in Sant Sadurní d’Anoia were declared a National Historic Artistic Monument in 1976, as one of the key works of Catalan modernism, created by Puig i Cadafalch.

Elaboration - Vinification

Our objective is to maintain the fullest expression of the fruit inside the bottle.

Our objective is to maintain the fullest expression of the fruit inside the bottle. We begin by planning the optimum moment for harvesting each varietal. After destemming and pressing the grapes we obtain choice musts which are fermented at a temperature between 15 and 17 °C. Once fermentation is completed we proceed with the blending of the resulting wines. The second fermentation takes place in the bottles in our underground cellars at a constant temperature (15-17 °C), followed by a period of cellaring in contact with the lees of the yeasts to add structure and aromatic complexity.

Segrià/Chardonnay. An exclusive vineyard located in the most continental zone of the Denomination of Origin Cava. The extreme climate (low rainfall and very Sharp contrasts in temperature) and the shallow soils make for a fuller concentration of flavors and aromas in this unique cava.
Conca de Barberà/Pinot Noir. Located in one of the coldest zones of the D.O. Cava on the north face of Prades mountain. A very special microclimate: cold because of its orientation but receiving mild sea breezes; which results in cool temperatures during the entire vineyard cycle. In addition, the “licorella” soils, (the same geological origin as the Priorat terroirs) render grapes with a very characteristic mineral taste. All this makes for a long growing cycle for the Pinot Noir as well as slow ripening.
Penedès/Xarel·lo. A vineyard located in Alt Penedès that houses authentic jewels. The deep calcareous and gravel grounds are ideal for the roots of the Xarel·lo strains, which go downhill and provide the variety with great elegance as well as good acidity, which is very appropriate for long aging and to promote the concentration of aromas. Strong thermal contrast, which favors maturation during the day and maintains acidity at night, so that the wine displays all its aromatic potential without losing its structure and richness.
