Ars Collecta Qualified Vineyard El Tros Nou is a unique vineyard of Pinot Noir located in one of the coldest areas of the D.O. Cava: the Serralada de Prades. Its most outstanding feature are its "licorella" soils that give Pinot Noir a very characteristic mineral touch. The 2009 vintage was characterized by a rainy winter, a moderately humid spring and a mild summer at the beginning, and with a very hot end. Even so, and thanks to the privileged location, exposure and age of the vineyard, the Pinot Noir grape that arrived at the winery created 1,200 bottles of cava that has a complex combination of elegance and freshness and, above all, an enormous aging potential. A cava that can be harmonized with seafood (prawns, crayfish, scallops, barnacles), fish with soft sauces and prepared raw (sashimi, sushi, carpaccio or tartar), cod, monkfish, all kinds of rice, lightly seasoned meats and smoked.
The qualification of Rated Spot, granted by the Ministry of Agriculture, Fisheries, Food and Environment, is an exclusive hallmark for those cavas made with grapes from a specific place, whose own edaphic and microclimatic conditions, together with criteria of quality in its production and elaboration, they have favored a cava of singular characteristics, and that they only own 15 cavas of the whole country, three of them, the mentioned ones of Codorníu. Three cavas with an aging of more than 90 months that express the strength and uniqueness of the soil and the climate where they are born.

This cava brings new organoleptic nuances to the usual expression of cavas based on Pinot Noir. We can enjoy them in a generous array of pairings such as seafood (prawns, scampi,scallops, barnacles), fish with mild sauces and prepared raw (sashimi, sushi, carpaccio ortartar), cod, monkfish, all kinds of rice dishes, plain and smoked meats. We also recommend tasting it alone just to savour the wide range of registers that this cava offers as well as with gourmet aperitifs.

Nose

Fruity notes that linger with all their potential in the aroma, primarily of red fruit (cherries and raspberries) and green notes. In the glass it unfolds mineral spicy notes (pink pepper),delicate reminiscences of its aging and origin.

A powerful, intense and tasty mouthfeel with abundant aromas of red fruit, fresh and vivacious. With an elegant creamy mousse and along lingering fruity and mineral finish that gives way to notes of preserve interlaced with delicate smoked and woody nuances.

The Winery

The history of Codorníu is the story of 18 generations of a vine growing family.  In 1872, Josep Raventós made the first bottle of cava, applying the traditional method to a blend of the grape varieties of Penedès: Macabeo, Xarel·lo and Parellada. Codorníu reflects the history, tradition, passion and expertise of a family winery with more than 450 years of history, which today continues to maintain its leading position in the production of quality wines and cavas. His cellars in Sant Sadurní d’Anoia were declared a National Historic Artistic Monument in 1976, as one of the key works of Catalan modernism, created by Puig i Cadafalch.

A traditionally crafted cava, selecting and harvesting the vineyard’s premium quality grapes. Night harvesting at the end of August taking advantage of the cool temperature in order to avoid oxidation of the grapes’ aromas, hand-picked in small boxes. The grapes were transported in a refrigerated truck to our micro-winery where this cava range is made: El Celler Jaume. On entering we select the grapes, cool them and crush them in a pneumatic press to avoid tainting the must with the skins and in this way obtain a Blanc de Noirs. The must is fermented in small tanks at 17 °C. Finca El Tros Nou is a cava that has aged slowly for over 90 months at a constant temperature of 14°C within the thick walls of what was originally Codorníu’s first cellar. Limited production of 1,200 bottles.
