Raimat Lo Fred de Ponent is a Brut Reserva cava, which, as its name indicates, comes from a cold area, from sustainable vineyards that grow at the lowest temperatures on the Raimat estate. Thanks to this microclimate, we obtain a very fresh 100% Xarel·lo cava, with very good acidity and notes of citrus.  After 15 months' ageing, this sparkling wine is vibrant and elegant, a cava that will retain its liveliness and refreshing character for 3 or 4 months after disgorgement.  An ideal choice for those moments when you fancy a very fresh cava.

The Winery

The history of Raimat goes back to 1914, when Manuel Raventós i Domènech acquired a plot of arid and unfertile land in a unique setting, converting it into what it is today: 2,245 hectares of 100% certified organic vineyards.  Raimat is the expression of wines from Lleida, a land renowned for the quality of its fruit, where the continental climate means that the grapes from this estate give intense and flavourful wines.  The winery is a pioneer in the use of the latest growing and winemaking technology, making a clear commitment to sustainable viticulture and to respecting the land and the environment.

Elaboration - Vinification

The grapes were picked manually, in early August, at dawn, to take advantage of the colder temperatures.

The grapes were gently pressed and fermented in stainless steel tanks to maintain fruit aromas. This was followed by malolactic fermentation. A minimum fifteen months’ aging at the constant temperature maintained by the thick walls of our cellars allow this Reserve Cava to retain its vibrancy for three or four more years.

The grapes for this cava come from 25-year-old vines located in the westernmost part of the municipality, in one of the coldest Raimat vineyards.

The grapes for this cava come from 25-year-old vines located in the westernmost part of the municipality, in one of the coldest Raimat vineyards, with a microclimate that can reach two degrees below temperatures in the easternmost vineyard. The soils in this area are heavier but shallower, with a silty loam texture, making them cooler. These characteristics, together with appropriate canopy management and bush training to ensure there is shade for the grapes result in a Xarel·lo with a citrus profile, herbaceous aromas and very good acidity. This makes it particularly suitable for making a cava that is both complex and able to withstand aging. After a dry winter and spring, the month of May proved alarmingly warm. June followed with very high temperatures and July was scorching. The grapes were picked early and arrived in impeccable condition, although in lower amounts. The first fermentations offered very clean, fresh white wines.
