Elaboration - Vinification

White Vol i Dol is characterized by a traditional vinification.

White Vol i Dol is characterized by a traditional vinification: after de-stemming and pressing, we cool and clarify the must and prepare it for the alcoholic fermentation that takes place at a controlled temperature of 16 ºC for approximately 15 days. The varieties are vinified separately, which allows the most harmonious blending for the Vol i Dol. The mixed, clarified and stabilized wine is stored in stainless steel tanks until bottling to preserve its freshness.

Our white grapes come mostly from the upper Penedés.

Our white grapes come mostly from the upper Penedés, where the Xarel·lo and Muscat varieties have their maximum expression thanks to their less fertile soils and the high thermal oscillation between day and night. The Chardonnay comes from the area of Costers de Segre, where the wines that are made have a lot of freshness and vivacity.
