An important part of the final blend was vinified on our premises. The must was fermented in stainless steel vats at 18 °C. and was then left to mature with fine lees for a month. The wines were then clarified and stabilised. They were sent for bottling, whilst at all times preserving an inert atmosphere to retain all their freshness.
