As always, for Can Matons, the most important thing is the origin, the vineyard. Not the method of elaboration. In this case, the vineyards, very close to the sea, provide us with the perfect racemes to make an excellent sparkling wine that is out of the ordinary: a gastronomic wine with bubbles. A terroir sparkling wine, which claims its Alella origin.

The Winery

The winery takes the name of the historic farmhouse (18th century) that stands among its vineyards in Santa María de Martorelles (Vallès Oriental). The common denominator of the wines is the native variety of the area (Pansa blanca) and the uniqueness of the vineyards, all of them historical and, in some cases, planted before the phylloxera. Another common denominator is the care of the vine so that the wine is the most honest expression of the terroir where it was born.

Elaboration - Vinification

Grape pressing and fermentation at a controlled temperature of 16ºC in French oak barrels and a small part in stainless steel tanks. 

A wet and rainy spring with mild temperatures resulted in high fungal disease pressure. The summer was dry but not excessively hot. In general, we can speak of a complex vintage, where each plot had its own particularities, with a higher production than in previous years, and wines of very good quality.

Vineyard - Viticulture

The vineyards of Sant Fost de Campsentelles are characterized by a very fine sandy textured soil called "sauló" from the decomposition of granite. 

It is a soil poor in nutrients, with low water retention and moderate PH. The vineyards are located on the slopes of the Cordillera de la Marina mountain range, with a gentle orography. The vineyards are 20 years old. The vineyards are planted at a density of 3,500 vines/ha. The vines are trained on trellises with short pruning.
