Elaboration - Vinification
Whole bunch pressing.
Very slow fermentation at a controlled temperature in stainless steel tanks. Fermentation was stopped with just the right concentration of sugars to allow the must to finish fermenting in the bottle without adding extra sugar or additional must.

2021 was a dry year, however, thanks to the autumn and winter reserves, the vine was able to grow well.
It was a very healthy vintage, with harvest dates in line with those of recent years.
