The Winery

Elaboration - Vinification

Both the Tempranillo and the Cabernet Sauvignon underwent cold maceration for 12 to 24 hours at 10-12 °C.

The free run juice from 5-8% of the must was collected for rosé, which increased the extract of the remaining must. The two varietals were fermented separately in stainless steel self-emptying vats. The fermentation temperature was between 28-30 °C. The wine was kept in stainless steel tanks. It was then blended once it had matured, after which it was clarified and finally bottled.
