Harvesting is carried out mechanically at night. The grapes are destemmed and subjected to cold pellicular maceration for 4 hours at a temperature of 6 °C-43 °F. They are subsequently pressed. Alcoholic fermentation is carried out in stainless steel tanks at a low temperature so the aromas can express their full potential. The wine remains on fine lees until fined, in order to increase the volume in the mouth as well as its aging capacity.

This wine comes from vineyards planted more than 20 years ago in the area of Valladolid, situated at an average altitude of 750 m above sea level. The typical soils are stony, poor soils with good aeration and drainage.
