This Cavas Singulares project was born once the Cavas de Paraje project was consolidated. The production of these cavas is carried out in an artisanal way in the Celler Jaume micro-winery, located in the place where the first Codorniu cavas were made. They are born from small batches intended for learning, both at the vineyard and production level. If Celler Jaume is a tribute to the origin of Codorniu, Codorníu Ars collecta Cavas Singulares Rosé Gran reserva is a tribute to this variety that in its pink identity also resists the passage of time.
Dark golden color with soft pinkish reflections. Very fine bubbles forming continuous rosaries and a persistent crown indicating slow fermentation in the bottle.

On the complex nose with notes of candied cherry and liqueur, caramel, sloe, caramelized apple, briocheria with candied fruit, tobacco leaves.

Well-integrated acidity, broad on the palate and long.

The history of Codorníu is the story of 18 generations of a vine growing family. In 1872, Josep Raventós made the first bottle of cava, applying the traditional method to a blend of the grape varieties of Penedès: Macabeo, Xarel·lo and Parellada. Codorníu reflects the history, tradition, passion and expertise of a family winery with more than 450 years of history, which today continues to maintain its leading position in the production of quality wines and cavas. His cellars in Sant Sadurní d’Anoia were declared a National Historic Artistic Monument in 1976, as one of the key works of Catalan modernism, created by Puig i Cadafalch.
Night harvest. We do a gentle pressing, followed by fermentation at about 16ºC. We bottle to carry out the second fermentation.
It is in the bottle where the fine bubbles of this cava are integrated and formed. It maintains an aging with its lees of at least 9 years. Only 2,024 bottles have been produced.

This Pinot Noir comes from the Pla de Manlleu, in the Baix Penedès.
We look for very short macerations to avoid over-staining and limit oxidation, and we look for grapes with aging potential. At the beginning of the year, an early campaign was predicted, the budding, flowering and veraison phases were slightly advanced, compared to previous vintages. But after these stages, the weather changed. Daytime temperatures did not rise as much as usual and nighttime temperatures dropped more than expected, causing the ripening of the grapes to be slower and more progressive than normal. This slow and progressive maturation has allowed us to obtain wines with a very good intensity of fruit aromas and freshness.
The rains respected the harvest dates, facilitating a progressive harvest of the different areas of the estate and also of the varieties, at their optimum point of ripeness. Health was good and productions moderate.
