The Winery

The history of Codorníu is the story of 18 generations of a vine growing family.  In 1872, Josep Raventós made the first bottle of cava, applying the traditional method to a blend of the grape varieties of Penedès: Macabeo, Xarel·lo and Parellada. Codorníu reflects the history, tradition, passion and expertise of a family winery with more than 450 years of history, which today continues to maintain its leading position in the production of quality wines and cavas. His cellars in Sant Sadurní d’Anoia were declared a National Historic Artistic Monument in 1976, as one of the key works of Catalan modernism, created by Puig i Cadafalch.

Elaboration - Vinification

We plan the best time to harvest each grape variety.

We plan the best time to harvest each grape variety. The grapes are destemmed and pressed to obtain the musts with ferment at a regulated temperature of 17-18 °C. Once all the fermentations have taken place and the wines have been stabilised, it is time to prepare the coupage, where each variety contributes its special features. In order to maintain the essence of Anna de Codorníu, the composition of varieties remains unchanged: 70% Chardonnay grapes (continental climate) + 30% traditional varieties (Mediterranean climate), but with one difference. In order to preserve the freshness of the final cava the selected base wines are livelier and harmonise better with a higher sugar content than do more traditional cavas. After blending, the bottles are stored in our underground cellar at a constant temperature.

Vineyard - Viticulture

The grapes used to craft Anna Ice Edition are grown in selected vineyards.

The grapes used to craft Anna Ice Edition are grown in vineyards selected by our Winegrowing team working closely with our suppliers throughout the year to constantly improve the harvests, monitor ripening, decide when to commence the harvests and advise them so that the grapes enter our cellars in the best conditions, carefully and expediently transported to the winery.
